Lets talk cheese - we can't get enough of the stuff and stock just too many ranges to cover off here! Of course we stock the standards you need every day but we also stock some really unique & rare cheeses from all over Italy.
Take the Busti family for example (www.caseificiobusti.it) Franco has spent the last two years visiting their business in fauglia, Toscana so he fully understands the creation process, from bringing the sheep in from the fields in the morning and milking through to making the curds and even making Il Pinolo with pine nuts from Parco di Migliarino.
Age, we believe brings many benefits - taste and texture of course which is why we work closely with Pezzetta (www.pezzetta.it) who age many of our Cheeses (and indeed our cured meats). Pezzetta are based right in the north east of italy (in Friuli) and have been a family run business since the 1920's when Ninfa Pezzetta started collecting cheeses to sell on at traditional markets; Now managed by Marco & Paolo, Pezzetta's pride and consistant quality ensures we can supply the very best tasting cheeses & meats available today.
