- The color of the rind is ivory white while the color of the paste is a light straw. The texture is soft and creamy
- The taste is dolce, creamy and long while the aftertaste is creamy and dolce
- The Alta Langa dairy is situated in Bosia, between Alba and Cortemilia, and has taken it's name from Alta Langa Piemontese, still today a very green area. The cheeses are produced using traditional local recipes, maintaining the natural way of cheese making without adding conservatives or colorings
