Guanciale di Colonnata
Made with the cheeks of very big Padano pigs, aged for at least 6 months. The taste is sugary sweet, round, full to the palate, buttery and delicately meaty.
Outstanding in recipes, when sautèed it gives a strong fumé and nutty aroma. Enjoy it very thinly sliced. Excellent in Amatriciana sauce.
