The ANCHOVIES FROM THE CANTABRIAN SEA are known worldwide for it´s special properties: fine flavour and texture. Conservas Codesa was founded in 1976 in a small factory in Laredo. In 1998 changed into a new and bigger factory, with modern facilities to accomplish the EEC requirements. Nowadays it´s a 3rd generation factory with 80 workers approximately, highly specialized and with a profound traditional knowledge of the anchovies’ production.
Our location near the port of Laredo, assures us just one our time maximum to receive the fresh fish after the bidding and the deliver. There are around 144 species from the “Engraulidae” family, but we only produce with the “Engraulis Encrasicolus”, from the Spring Campaign.
We buy the fresher fish captured in the Cantabrian Sea (FAO ZONE 27), during the Spring Campaigns, at dawn and select the fishing boats, in order to make sure that the fish are not squashed or flattened during the fishing process. Our anchovies must be bigger than 38 to 40 fishes per kilo. This way, we also respect the sustainability regarding sizes and capture volumes.
We are capturing around 400 tones, in order to keep the anchovies 1 year or 1 year and a half maturating. This way we have enough fish to go on producing from one year to the other. All these important factors helps us to achieve a product with the stunningly large fresh shinny specimens!
The fish are then placed at a constant refrigerated temperature around 5ᵒC to mature and preserve for around 1 year, allowing them to develop both flavour and colour. When ready, the fish are filleted by hand with each bone being carefully removed before being perfectly laid in its tin. Finally, virgin olive oil is added. The oil used in our production was specifically produced to ensure the right balance of flavour to marry with the anchovy before the cans are sealed and labelled. Anchovy fillets are a semi-preserve product, which are different from that of preserved foods because they do not undergo a process of sterilization, on this basis It is necessary to store them in the refrigerator and to also consume within a period of 12 months from the date of packing.
